Creamy risotto with lots of mushrooms makes a great side and is hearty enough for a main meal.
Ingredients

2 1/2 cups arborio rice

4 tablespoons butter

1 pound cremini mushrooms, sliced

1 small onion, grated

2 cloves garlic, grated

1 cup grated parmesan

1/2 cup white wine

6 cups chicken or vegetable stock

2 teaspoons fresh thyme, chopped

1 teaspoon salt
- 1/2 teaspoon pepper
Instructions

Melt butter in a large pot over medium heat. Add the onion and cook for 5 minutes. Add the garlic and mushrooms and cook for another 5 minutes. Season with thyme, salt and pepper. Add the arborio rice and stir to coat. Add the wine and cook for 2 minutes.

Add 1/2 cup of stock, stir and simmer until absorbed. Continue adding stock about 1/2 cup at a time and stirring until the rice is cooked through.

Stir in the parmesan and enjoy.
