This is a delicious fall inspired soup with butternut squash, apples and crème fraiche
Ingredients

1 butternut squash, peeled and chopped into 1 in cubes

3 honeycrisp apples, peeled and quartered

2 onions, chopped

4 garlic cloves, smashed

1/4 cup olive oil

1 teaspoon ground cayenne

1/2 teaspoon ground cinnamon

2 teaspoons salt

1 teaspoon pepper

6 cups chicken (or vegetable) stock
Instructions

Heat oil in large pot. Add squash, apples, garlic, salt and pepper. Cook 10-12 minutes.

Add stock and simmer for 1 1/2 hours

Blend soup until smooth

Stir in 1/4 cup creme fraiche and serve
Takes 2 hours (30 minutes active)
