This zesty flavorful marinated steak is perfect topped with cilantro and onion and nuzzled in a tortilla!


  • 2 pounds skirt steak

  • 1 cup cilantro, chopped

  • 2 limes, juiced

  • 3/4 cup orange juice

  • 2 dried guajillo chilies

  • 1 cup coffee, hot fresh brewed

  • 4 cloves garlic

  • 1/4 cup Jalapeno Olive Oil (or any varietal)

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 white onion, finely minced

  • Tortillas, limes and more cilantro for serving


  1. Add the dried chilis to a cup of hot coffee to soften. Once soft, remove the stem and add to a blender with the coffee. Add the cilantro, lime juice, orange juice, garlic, olive oil, salt and pepper to the blender and blend until smooth.  Place the steak in a large food storage bag and add the marinade. Marinade for at least 2 hours, ideally overnight. 

  2. Heat grill to high heat. Remove the steak from the marinade and grill for about 4 minutes per side until cooked to medium rare. Let rest for 10 minutes and then thinly slice against the grain.

  3. Serve with warmed tortillas, onion, cilantro and lime.

Takes 20 minutes plush marinating time
