This is my husband's absolute favorite meal - and for good reason. It takes some effort, but is totally worth it. What’s not to love about garlic butter stuffed fried chicken?!
Ingredients

4 boneless chicken breasts, pounded thin

1 stick butter, room temperature

3 cloves garlic, grated

1 teaspoon salt

1/2 teaspoon pepper

2 tablespoons parsley, minced

1 cup panko bread crumbs

1 cup flour

2 eggs

3 cups peanut oil
Instructions

In a small bowl mix together the butter, garlic and parsley. Place in a food storage bag and spread in to a 4 inch by 4 inch square. Place in the freezer for 1 hour.

Pound the chicken breasts thin and season on both sides with salt and pepper. Cut the frozen butter into four 1 inch strips. Place the chicken presentation side down on a piece of plastic wrap. Place 1 slice of butter in the center of the chicken and roll the chicken like a burrito, sealing with the plastic wrap. Repeat for all of the chicken. Place in the freezer for 1 hour.

Set up your breading station with 3 shallow bowls. In the first add the flour, in the second add the eggs and whisk with a splash of water, in the third add the panko. Remove the chicken from the freezer and from the plastic wrap. Add the chicken to the flour, egg, then panko to bread. Set on a sheet pan and return to the freezer for 30 minutes.

Heat the oven to 350 degrees and heat the oil in a deep skillet. Once the oil is hot, add the chicken and fry for about 5 minutes per side until golden brown. Place the chicken on a wire rack over a sheet pan. Bake the chicken for 10 minutes until cooked through.
