Chile Lime Cauliflower Tacos

Roasted, spice cauliflower layered with avocado, radish, and lime sour cream - delicious!


  • 1 head of cauliflower, chopped

  • 2 tablespoons Chile Lime Rub

  • 2 limes

  • 2 avocados

  • 6 radishes, chopped

  • 1/4 cup cilantro, chopped

  • 1/2 cup sour cream

  • 1/4 cup olive oil

  • 6 tortillas, flour or corn

  • 1 tablespoon salt


  1. Heat oven to 450 degrees.

  2. In a large bowl toss the cauliflower, oil, Chile Lime Rub and juice of one lime. Transfer to a sheet pan and roast for about 15 minutes until tender.

  3. Mix the avocados, juice of half lime, cilantro, and radishes together into a mash.

  4. Mix the sour cream and juice of half a lime.

  5. Warm the tortillas in the oven or on the stove.

  6. Top a tortillas with avocado mash, cauliflower and sour cream. Enjoy!
