This is a super flavorful take on chicken tacos with the help of Blood Orange Dark Balsamic Vinegar and Persian Lime Olive Oil.
Ingredients
- 1 pound boneless chicken (breasts or thighs)
- 1 tablespoon Fajita Seasoning
- 2 tablespoons Persian Lime Olive Oil
- 1/4 cup Blood Orange Dark Balsamic Vinegar
- 1/2 cup chicken stock
- 1/4 cup orange juice
- 1 small white onion, minced
- 1/2 cup crumbled cotija cheese
- 1/4 cup cilantro
- 1 lime, cut into wedges
- Tortilla shells
Instructions
- Season the chicken on both sides with the fajita seasoning
- Heat the olive oil in a skillet over medium heat. Add the chicken and sear for 3 minutes on each side. Add the balsamic vinegar, chicken stock, and orange juice. Cover and simmer for 10 minutes until cooked through. Uncover and use two forks to shred the chicken. Simmer in the sauce for a few minutes to thicken.
- Warm the tortilla shells and assemble your tacos with chicken, cheese, onion, cilantro and a squeeze of lime.
