Crispy Chorizo Tacos

This is a delicious mash up between a taco, quesadilla, and smash burger!

Ingredients

  • 1 pound ground chorizo sausage
  • 6 flour tortillas
  • 1 jalapeno, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/2 cup cotija cheese
  • 1/4 cup crema

Instructions

  1. Divide the chorizo sausage into 6 equally sized balls
  2. Heat a large skillet over medium high heat
  3. Add a chorizo ball to the skillet and place a tortilla on top. Flatten the chorizo until it is as thin as possible, covering the tortilla. Cook for 5 minutes until the chorizo is crisp and flip cooking on the other side until the tortilla is slightly crisp. Remove and set aside. Repeat with the remaining chorizo and tortillas, fitting as many as you can in the skillet at once.
  4. Top the tacos with jalapenos, cheese, crema and cilantro.

Takes 15 minutes
