This is my favorite egg salad recipe - it is perfect on a sandwich or straight from the bowl!
Ingredients
- 6 hard boiled eggs, peeled and chopped
- 3 celery hearts, finely diced
- 2 teaspoons capers
- 1/4 cup mayo

1 teaspoon
Italian Red Wine Vinegar - 1 teaspoon
Cajun Seasoning - 3 teaspoons dijon mustard
- 1 tablespoon fresh dill, minced
Instructions
- In a small bowl mix the mayo, cajun seasoning, mustard and vinegar. Mix in the eggs, capers, celery and dill.
Store covered in the refrigerator for up to 3 days
Takes 10 minutes
Makes 3-4 servings
