Red bell peppers, onions, black beans cooked together then stuffed in a big flour tortilla with lots of cheese and topped with fresh guac.
Ingredients

1 red onion, sliced

1 red bell pepper, sliced
- 2 tablespoons Fajita Seasoning

2 garlic cloves, grated

2 tablespoons Jalapeno Olive Oil

1 can black beans

1/2 cup vegetable stock

1 teaspoon salt

2 tablespoons butter

2 large flour tortilla shells

2 cups Monterey jack cheese, shredded

2 avocados
-
1/2 cup cilantro

1 lime, juiced
Instructions

Heat olive oil in a skillet over medium heat. Add the onions, peppers, garlic, chili powder, cumin, paprika and salt tossing well to coat. Cook for about 10 minutes until tender. Add the black beans and stock and simmer for 5 minutes.

Heat butter in a skillet, add a tortilla, filling, and cheese. Fold in half and cook until both sides are crisp.

Serve with fresh guac made by mashing together the avocados, cilantro and lime juice.
