This is my go-to soup when I'm not feeling well. It is spiced with turmeric, ginger, cinnamon and cayenne that makes everything feel better.
Ingredients
- 2 cups of shredded rotisserie chicken
- 2 quarts chicken stock
- 1 onion, diced
- 2 celery hearts, diced
- 2 carrots, peeled and diced
- 4 cloves garlic, minced
- 2 tablespoons Roasted Garlic Olive Oil
- 2 tablespoons Golden Milk
- 1/2 teaspoon Cayenne Pepper
- 1 teaspoon salt
- 1 cup egg noodles
Instructions
- Heat the olive oil in a pot over medium heat. Add the onion, celery, carrots, and garlic. Saute for 3 minutes. Stir in the golden milk, cayenne, and salt and saute for another 5 minutes until the veggies begin to soften.
- Add the chicken stock and simmer for 10 minutes.
- Stir in the chicken and egg noodles. Simmer for another 5-10 minutes until the noodles are tender.
Takes 30 minutes
Serves 4 - 6
