Green Goddess Chicken Salad - Olive Branch Oil & Spice

This is a herby, garlicky chicken salad that is perfect as a sandwich filling, over lettuce or on top of crackers.

Ingredients

  • 1 rotisserie chicken shredded
  • 1 cup Greek yogurt
  • 1 cup parsley, chopped
  • 1/2 cup dill, chopped
  • 1/4 cup mint, chopped
  • 1/4 cup chives, chopped
  • 1 lemon, juiced and zested
  • 1 tablespoon Garlic Fused Extra Virgin Olive Oil
  • 1/2 teaspoon Red Pepper Flakes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper 

Instructions

  1. Add the yogurt, herbs, lemon juice and zest, olive oil, salt, pepper and red pepper flakes to a food processor. Blend until smooth.
  2. Toss the green goddess dressing with the shredded chicken. 

Note: If you don't have a rotisserie chicken, you can roast 2 large bone-in chicken breast at 400 degrees for 40 minutes. Let cool and then shred.

Takes 10 minutes
