This is a herby, garlicky chicken salad that is perfect as a sandwich filling, over lettuce or on top of crackers.
Ingredients
- 1 rotisserie chicken shredded
- 1 cup Greek yogurt
- 1 cup parsley, chopped
- 1/2 cup dill, chopped
- 1/4 cup mint, chopped
- 1/4 cup chives, chopped
- 1 lemon, juiced and zested
- 1 tablespoon Garlic Fused Extra Virgin Olive Oil
- 1/2 teaspoon Red Pepper Flakes
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Add the yogurt, herbs, lemon juice and zest, olive oil, salt, pepper and red pepper flakes to a food processor. Blend until smooth.
- Toss the green goddess dressing with the shredded chicken.
Note: If you don't have a rotisserie chicken, you can roast 2 large bone-in chicken breast at 400 degrees for 40 minutes. Let cool and then shred.
