Grilled Barbecue Chicken Bowls

Grilled Barbecue Chicken Bowl - Olive Branch Oil & Spice

 

Chicken grilled and slathered with barbeque sauce. Tossed with grilled pineapple, red peppers and served over rice.

Ingredients

  • 1 pound boneless skinless chicken breast or thighs
  • 1 pineapple, sliced
  • 1 red bell pepper, quartered
  • 2 tablespoons Koroneiki Greek Extra Virgin Olive Oil
  • 1 tablespoon Barbecue Dust
  • 1 cup rice, cooked
  • 1/4 cup cilantro, chopped
  • 1/2 cup barbecue sauce
  • 1 lime, wedges

Instructions

  1. Heat grill to high.

  2. Toss the chicken with the barbecue dust.  Drizzle the pineapple and red pepper with olive oil. Add the chicken, pineapple, and red pepper to the grill.

  3. After about 6 minutes baste the chicken with barbecue sauce and flip the chicken, pineapple and red pepper. Coat the other side of the chicken with barbeque sauce as well.

  4. Once cooked through remove everything with the grill. Add more barbeque sauce to the chicken.

  5. Chop everything into bite sized pieces and place a top a bed of rice, top with cilantro and serve with lime.

Takes 20 minutes
