This is the salad I always make for holiday gatherings. It has bright bitter greens, with apples, cranberries, dill and a creamy vinaigrette.
Ingredients
- 1 bunch swiss chard, stemmed and thinly sliced
- 2 heads of endive, sliced
- 1 head of radicchio, sliced
- 1 apple, sliced
- 1/4 cup dill, chopped
- 1/2 cup dried cranberries
- 1/2 cup sour cream
- 1/2 cup Apple Cider Vinegar
- 1/4 cup Meyer Lemon Olive Oil
- 1 lemon, juiced
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Add the sour cream, apple cider vinegar, meyer lemon olive oil, lemon juice, mustard, honey, salt and pepper to a bowl and whisk to combine.
- In a large bowl add the swiss chard, endive, radicchio, apple, dill and cranberries. Add about 1/2 cup of dressing and toss to coat. Add additional dressing as needed.
