Holiday Salad - Olive Branch Oil & Spice

This is the salad I always make for holiday gatherings. It has bright bitter greens, with apples, cranberries, dill and a creamy vinaigrette.

Ingredients

  • 1 bunch swiss chard, stemmed and thinly sliced
  • 2 heads of endive, sliced
  • 1 head of radicchio, sliced
  • 1 apple, sliced
  • 1/4 cup dill, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup sour cream
  • 1/2 cup Apple Cider Vinegar
  • 1/4 cup Meyer Lemon Olive Oil
  • 1 lemon, juiced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Add the sour cream, apple cider vinegar, meyer lemon olive oil, lemon juice, mustard, honey, salt and pepper to a bowl and whisk to combine.
  2. In a large bowl add the swiss chard, endive, radicchio, apple, dill and cranberries. Add about 1/2 cup of dressing and toss to coat. Add additional dressing as needed.

Serves 6-8
