Honey Balsamic Pork with Butternut Squash

This is an easy one pan dinner that is full of flavor from the honey balsamic marinade.


  • 1 pork tenderloin

  • 1 butternut squash, peeled and chopped

  • 1/4 cup Traditional Balsamic Vinegar

  • 1 tablespoon honey
  • 2 cloves garlic, grated

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 2 tablespoons olive oil


  1. Heat oven to 400 degrees

  2. Mix the honey, balsamic vinegar, garlic, salt and pepper in a large bowl then add the pork and squash. Marinade for 10 minutes (or however long you have).

  3. Heat the oil in a large oven proof skillet. Add the pork and sear on both sides, then add the squash and remaining marinade.

  4. Transfer to the oven and roast for 15-20 minutes until the pork reaches an internal temperature of 145 degrees and the squash is tender.

Takes 30 minutes
