This is an easy one pan dinner that is full of flavor from the honey balsamic marinade.
Ingredients

1 pork tenderloin

1 butternut squash, peeled and chopped

1/4 cup Traditional Balsamic Vinegar
- 1 tablespoon honey

2 cloves garlic, grated

1 teaspoon salt

1/2 teaspoon pepper

2 tablespoons Koroneiki Olive Oil
Instructions

Heat oven to 400 degrees

Mix the honey, balsamic vinegar, garlic, salt and pepper in a large bowl then add the pork and squash. Marinade for 10 minutes (or however long you have).

Heat the oil in a large oven proof skillet. Add the pork and sear on both sides, then add the squash and remaining marinade.

Transfer to the oven and roast for 15-20 minutes until the pork reaches an internal temperature of 145 degrees and the squash is tender.
