Jalapeno Popper Chicken

This chicken is stuffed with jalapenos, cream cheese and cheddar cheese for a cheesy, spicy delicious dinner.


  • 4 boneless chicken breasts

  • 3 tablespoons cream cheese, room temperature

  • 1/4 cup cheddar cheese, shredded

  • 1 teaspoon garlic powder

  • 2 jalapenos, seeded and sliced

  • 2 tablespoons Jalapeno Olive Oil

  • 1 teaspoon salt

  • 1/2 teaspoon pepper


  1. Heat the oil in an ovenproof skillet over medium heat.

  2. Mix the cream cheese, cheddar cheese, and garlic powder in a bowl.

  3. Slice the chicken crosswise almost through the chicken (but not all the way!) to make a pocket. Stuff each chicken breast with 2 tablespoons of the cheese filling and a couple slices of jalapeno. Season the outside of the chicken with salt and pepper.

  4. Add the chicken to the skillet and saute for about 7 minutes per side until golden brown and cooked through.
