This is one of my favorite pasta meals to make when I don't feel like cooking. Warm pasta is tossed with ricotta, lemon juice and herbs for a quick, tasty meal.
Ingredients
- 1 pound pasta
- 2 cups ricotta
- 1 lemon, juiced and zested
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 2 tablespoons Basil Olive Oil
- 1 tablespoons Lemon White Balsamic Vinegar
- 1/2 teaspoon Red Pepper Flakes
- 1 teaspoon Fleur de Sel
Instructions
- Bring a large pot of salted water to a boil and cook the pasta to al dente.
- While the pasta cooks, add the ricotta, lemon juice and zest, herbs, olive oil, balsamic vinegar, red pepper flakes and salt to a large bowl and whisk to combine. When the pasta is cooked, add about 1/4 cup pasta water to the ricotta mixture, then toss with the pasta and enjoy!
