Lemon Ricotta Pasta - Olive Branch Oil & Spice

This is one of my favorite pasta meals to make when I don't feel like cooking. Warm pasta is tossed with ricotta, lemon juice and herbs for a quick, tasty meal.

Ingredients

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta to al dente.
  2. While the pasta cooks, add the ricotta, lemon juice and zest, herbs, olive oil, balsamic vinegar, red pepper flakes and salt to a large bowl and whisk to combine. When the pasta is cooked, add about 1/4 cup pasta water to the ricotta mixture, then toss with the pasta and enjoy!

Takes 15 minutes
