This is a simple, flavorful and delicious salad with kale, couscous, feta and pomegranate.
Ingredients
- 4 cups dinosaur kale, thinly sliced (2 bunches)
- 1 cup feta, crumbled
- 1 cup Israeli couscous, cooked
- 1 cup pomegranate arils
- 1/4 cup Blood Orange Fused Extra Virgin Olive Oil
- 2 tablespoons Pomegranate Balsamic Vinegar
- 2 tablespoons orange juice
- 1 tablespoon dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Lemon Herb seasoning
Instructions
- In a small bowl mix the olive oil, balsamic vinegar, orange juice, dijon mustard, salt, pepper and lemon herb seasoning until combined.
- Add the kale to a large bowl and drizzle enough dressing to coat. Massage the dressing into the kale to tenderize the kale.
- Add the couscous, feta and pomegranate. Toss with a bit more dressing and enjoy!
