Roasted Salmon with Corn and Tomatoes

This salmon roasted with corn and tomatoes is one of my favorite easy, one pan - delicious - dinners!

Ingredients

  • 1 pound salmon filet
  • 2 teaspoons Salmon Rub
  • 1 ear corn, husked and corn cut off the cob
  • 1 pint grape tomatoes, sliced in half
  • 1/4 cup parsley, chopped
  • 1 tablespoon Koroneiki Olive Oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Heat oven to 450 degrees.
  2. Place salmon on a sheet pan and rub with salmon rub.
  3. In a small bowl mix the corn, tomatoes, parsley, olive oil, salt and pepper together.  Top the salmon with the corn mixture. 
  4. Roast for 20 minutes until the salmon is just cooked through.

Serves 2
