This salmon roasted with corn and tomatoes is one of my favorite easy, one pan - delicious - dinners!
Ingredients
- 1 pound salmon filet
- 2 teaspoons Salmon Rub
- 1 ear corn, husked and corn cut off the cob
- 1 pint grape tomatoes, sliced in half
- 1/4 cup parsley, chopped
- 1 tablespoon Koroneiki Olive Oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Heat oven to 450 degrees.
- Place salmon on a sheet pan and rub with salmon rub.
- In a small bowl mix the corn, tomatoes, parsley, olive oil, salt and pepper together. Top the salmon with the corn mixture.
- Roast for 20 minutes until the salmon is just cooked through.
