Roasted Tomato Bruschetta

Roasted tomatoes tossed with garlic, basil and served on crostini. So good!

Ingredients
  • 1 baguette

  • 2 pints cherry tomatoes, sliced in half

  • 1/2 cup basil leaves, thinly sliced

  • 2 garlic cloves, grated

  • 1 teaspoon dried thyme
  • 1/2 cup olive oil

  • 1 tablespoon balsamic vinegar

  • 2 teaspoons salt

Instructions
  1. Heat the oven to 400 degrees.

  2. Toss tomatoes with 1/4 cup olive oil, garlic, thyme, and salt. Place on a sheet plan flesh side up and roast for about 20 minutes until tender.  Let cool to room temperature

  3. Increase the oven temperature to 450 degrees.

  4. Cut the bread into slices and drizzle with olive oil and sprinkle with salt. Roast the bread for about 10 minutes until golden brown.

  5. While the bread cooks, mix the basil with the tomatoes.

  6. Top the bread with tomatoes, drizzle with balsamic vinegar and enjoy.

Takes 35 minutes
