This is a super easy and delicious combination of salmon, artichokes, tomatoes, olives and feta that comes together on a sheet pan.
Ingredients
- 4 salmon fillets
- 1 cup pitted castelvetrano olives
- 1 pint cherry tomatoes
- 1 cup artichoke hearts
- 8 ounces feta, cut into cubes
- 2 tablespoons Mediterranean Medley Olive Oil
- 2 teaspoons Tuscan Seasoning
- 1/4 cup pesto (optional)
Instructions
- Heat oven to 400 degrees
- Pat the salmon fillets dry with a paper towel and sprinkle with the tuscan seasoning
- Add the salmon to the sheet pan and surround with the tomatoes, olives, artichokes, and feta. Drizzle everything with olive oil.
- Transfer to the oven and bake for 15 minutes until the salmon is cooked through.
- Top with a pesto and enjoy!
