This thinly sliced pork tenderloin is coated in a spicy sauce and stir fried with snow peas - ready in under 15 minutes!
Ingredients
- 1 pound boneless pork tenderloin thinly sliced
- 1 cup snow peas
- 2 teaspoons cornstarch
- 1 tablespoon ginger, grated
- 2 garlic cloves, grated
- 1/4 cup green onions, sliced
- 2 tablespoons sambal oelek or sriracha
- 1 lime, juiced
- 2 tablespoons honey
- 1 cup rice, cooked
- 2 tablespoons grapeseed oil
Instructions

Heat oil in skillet over medium high heat.

Mix together the cornstarch, ginger, garlic, sambal, lime juice and honey. Toss in the pork and mix to coat.

Add the pork and sear for about 3 minutes per side. Add the snow peas and cook for another few minutes.

Top with green onions and serve with rice.
Note: I usually save a few pork slices on the side and sear with salt, pepper and oil for the not spicy loving members of my family.
