Spicy Shrimp Gnocchi

This is one of my favorites! Fresh tomatoes with lots of garlic and red pepper flakes tossed with gnocchi and shrimp.

Ingredients

  • 1 pound peeled and deveined shrimp

  • 3 cups cherry tomatoes

  • 4 cloves garlic, minced

  • 1 tablespoon red pepper flakes

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 2 tablespoons Koroneiki Olive Oil 

  • 1/4 cup white wine

  • 1 package gnocchi

  • 1/4 cup parsley, finely chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi to al dente.

  2. Heat the olive oil in a large skillet of medium heat. Add the garlic and cook for 1 minute. Add the tomatoes, red pepper flakes, salt and pepper. Cook for 5 minutes, then add the wine and cook for another 5 minutes until the tomatoes burst.

  3. Season the shrimp with salt and pepper and add to the skillet. Cook for about 1 minute per side. Add the gnocchi and parsley and toss well.

Takes 20 minutes
