This is a super easy, super delicious sheet pan dinner. Chicken tossed with garlic, honey and sumac and roasted with sweet potatoes and layered in pita with lemony yogurt.
Ingredients
- 1 pound boneless chicken, cut into strips
- 1 sweet potato, cut into strips
- 3 cloves garlic, minced
- 2 teaspoons sumac
- 1/4 cup Garlic Fused Extra Virgin Olive Oil
- 2 tablespoons honey
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup Greek yogurt
- 1/2 lemon, juiced
- pita or naan for serving
Instructions
- Heat oven to 425 degrees.
- In a small bowl mix the garlic, sumac, 2 tablespoons oil, honey, salt and pepper together.
- One one side of a sheet pan add the chicken and toss with the sumac mixture. To the other side, add the sweet potato and toss with the remaining oil and a pinch of salt and pepper. Transfer to the oven and cook for 25 minutes.
- While the chicken cooks mix the yogurt and lemon juice.
- Serve the chicken and potato with pita and yogurt sauce.
