Tuscan Lemon Chicken and Balsamic Escarole

This is an easy flavorful chicken dinner with tuscan seasoning and lots of lemon.


  • 4 boneless chicken breasts
  • 2 tablespoons Tuscan Seasoning
  • 2 tablespoons butter
  • 4 tablespoons olive oil
  • 1 bunch escarole, chopped
  • 1 lemon, juiced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons salt
  • 1 teaspoon pepper


  1. Mix 2 tablespoons olive oil, tuscan seasoning, 1 teaspoon salt, pepper, and juice of 1 lemon in a large food storage bag. Add the chicken and coat with the marinade. Marinade for 15 minutes.
  2. Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet. Saute the chicken for 5-7 minutes per side until just cooked through. Set aside and loosely tent with foil.
  3. In the hot skillet add the escarole and saute for 2 minutes until it just starts to brown. Add a pinch of salt and the vinegar and stir to combine. Top with parmesan cheese and serve with the chicken and more lemon.

Takes 15 minutes (plus 15 minutes marinade)
