This is an easy flavorful chicken dinner with tuscan seasoning and lots of lemon.
Ingredients
- 4 boneless chicken breasts
- 2 tablespoons Tuscan Seasoning
- 2 tablespoons butter
- 4 tablespoons Nocellara del Belice Olive Oil
- 1 bunch escarole, chopped
- 1 lemon, juiced
- 1/2 cup grated parmesan cheese
- 2 tablespoons Traditional Dark Balsamic Vinegar
- 2 teaspoons salt
- 1 teaspoon pepper
Directions
- Mix 2 tablespoons olive oil, tuscan seasoning, 1 teaspoon salt, pepper, and juice of 1 lemon in a large food storage bag. Add the chicken and coat with the marinade. Marinade for 15 minutes.
- Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet. Saute the chicken for 5-7 minutes per side until just cooked through. Set aside and loosely tent with foil.
- In the hot skillet add the escarole and saute for 2 minutes until it just starts to brown. Add a pinch of salt and the vinegar and stir to combine. Top with parmesan cheese and serve with the chicken and more lemon.
Takes 15 minutes (plus 15 minutes marinade)
