This creamy garlicky whipped feta topped with flavorful marinated olives is a delicious and stunning appetizer for any gathering. The whipped feta and olives are great together, but you could also serve these separately.
Ingredients
Whipped Feta
- 8 ounces feta
- 3/4 cup Greek yogurt
- 1/4 cup Garlic Fused Extra Virgin Olive Oil
- 1/2 teaspoon Red Pepper Flakes
- 1/2 lemon, juiced
Marinated Olives
- 2 cups olives, pitted (I like a combination of kalamata and castelvetrano)
- 1/2 cup Koroneiki Greek Extra Virgin Olive Oil
- 1 tablespoon Italian Red Wine Vinegar
- 2 teaspoons Bruschetta Seasoning
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, grated
- Zest of 1 lemon
- 1 tablespoon Traditional Aged Dark Balsamic Vinegar
Instructions
- Cut half the olives in half and keep the other half whole. Add the olives to a bowl and mix with olive oil, red wine vinegar, bruschetta seasoning, parsley, garlic and lemon zest. You can use these olives right away or marinate for about an hour.
- While the olives marinate, make the whipped feta. Add the feta, yogurt, garlic olive oil, red pepper flakes and lemon juice to a food processor and blend until smooth.
- Add the whipped feta to a serving dish and top with marinated olives. Drizzle with traditional dark balsamic vinegar. Serve with crackers, flatbread, or crostini.
