A spicy, creamy blend of white beans, tomatoes, and peppers topped with cheddar
Ingredients
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 jalapeño peppers, sliced
- 1 28 ounce can whole peeled tomatoes
- 2 cans cannellini beans, drained and rinsed
- 2 tablespoons Jalapeno Olive Oil
- 3 tablespoons Chili Con Carne
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Monterey jack cheese, sour cream and cilantro for serving
Instructions

Heat the oil in a pot over medium heat and sauté the onion and garlic for 5 minutes. Add the red bell pepper, jalapeño, chili con carne, salt and pepper and cook for another 5 minutes.

Add the tomatoes, beans and 1/2 can of water. Break apart the tomatoes with a spoon and simmer for 30 minutes.

Top with cheese, sour cream and cilantro
