I love a good frittata. They are easy, delicious and make for really fantastic lunch leftovers. This one is a simple combination of baby potatoes, bacon and gruyere.
Ingredients

8 eggs

1/4 heavy cream

4 slices bacon, chopped

3 baby red potatoes, diced

2 cloves garlic, minced

1 cup shredded gruyere

1 teaspoon salt
- 1/2 teaspoon pepper
Instructions

Preheat oven to 400 degrees

Whisk the eggs, cream and cheese together

Cook the bacon in an ovenproof skillet until crisp, 8 to 10 minutes

Remove the bacon then add the potatoes and saute for 4 to 6 minutes until they start to get tender

Add the garlic, salt and pepper and cook for about 1 minute, then add the bacon back in. Pour in the egg mixture and tilt the pan to make sure the eggs spread over the bacon and potatoes.

Bake for 8 to 10 minutes. Slice like a pizza and enjoy.
Note: To reheat just pop in the microwave for about 90 seconds.
