Who doesn't love a hot chicken sandwich! Fried chicken thighs are doused with hot oil and topped with a lot of pickle action.
Ingredients

1 pound boneless chicken thighs

2 cups flour

2 eggs

1/2 cup buttermilk

2 cups peanut oil

1 tablespoon smoked hot paprika

2 teaspoons cayenne pepper

2 teaspoons salt

2 teaspoons pepper
- 3 tablespoons Hot Chicken

1/4 cup mayo
-
1 tablespoon parsley, chopped

1 tablespoon basil, chopped

1 teaspoon garlic powder

1/2 cup pickles

Heat oil in a deep pan to 325 degrees.

In a shallow bowl mix together the flour, paprika, cayenne, and 1 teaspoon each of salt and pepper. In another shallow bowl whisk together the eggs, buttermilk and remaining salt and pepper.

Dredge the chicken in the egg mixture, then the flour mixture. Fry for about 15 minutes, flipping every 5 minutes until golden brown and cooked to 165 degrees.

Transfer 1/2 cup oil to a small pot and add Hot Chicken seasoning. Simmer for 5 minutes.

While the hot oil cooks make the herb mayo by mixing the mayo, herbs and garlic powder together. Spread the mayo on both sides of the bun.

Brush hot oil on the fried chicken, add to the bun and top with a pile of pickles.
Note: For the kids I leave off the hot oil and the pickles to give them a yummy fried chicken sandwich.
