This is the easiest and most delicious sheet pan dinner. Gnocchi, lemons, tomatoes and feta are roasted together and topped with fresh basil.
Ingredients
- 1 package gnocchi
- 1 lemon, sliced
- 2 pints cherry tomatoes
- 6 ounces feta, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup Nocellara del Belice Italian Extra Virgin Olive Oil
Instructions
- Heat oven to 400 degrees.
- Add the gnocchi, lemon slices, tomatoes, and feta to a sheet pan. Top with salt, pepper, and olive oil.
- Roast for 20 minutes.
- Mix together and top with basil.
