Baked Lemony Gnocchi with Tomatoes and Feta

This is the easiest and most delicious sheet pan dinner. Gnocchi, lemons, tomatoes and feta are roasted together and topped with fresh basil.


  • 1 package gnocchi

  • 1 lemon, sliced

  • 2 pints cherry tomatoes

  • 6 ounces feta, chopped

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/4 cup Nocellara del Belice olive oil (or any varietal)


  1. Heat oven to 400 degrees.

  2. Add the gnocchi, lemon slices, tomatoes, and feta to a sheet pan. Top with salt, pepper, and olive oil.

  3. Roast for 20 minutes.

  4. Mix together and top with basil.

Takes 25 minutes
