This is a quick and delicious meal with shawarma spiced ground beef topped with tomatoes, cucumbers and a delicious tahini yogurt sauce.
Ingredients
- 1 pound ground beef
- 1/2 onion, grated
- 2 tablespoons Shawarma Seasoning
- 2 tablespoons Garlic Olive Oil
- 1/4 cup beef stock
- 1 roma tomato, chopped
- 1 persian cucumber (or 1/2 English), chopped
- 1/4 cup + 2 tablespoons chopped parsley
- 1 clove garlic, grated
- 1 cup Greek yogurt
- 2 tablespoons Tahini
- 1 lemon, juiced
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 cup rice, cooked
Instructions
- Heat the garlic olive oil in a skillet over medium high heat. Add the ground beef, flatten across the pan and cook for about 5 minutes until it begins to caramelize.
- Add the onion and shawarma seasoning. Mix to combine and break the beef apart with a spatula. Stir in the beef stock scraping up any brown bits on the pan and turn the heat down to low. Cook for another 3-5 minutes until the beef stock is slightly reduced and the beef is cooked through.
- While the beef cooks, make the sauce by mixing the yogurt, tahini, garlic, lemon juice, 2 tablespoons parsley, 1 teaspoon of salt and 1/2 teaspoon of pepper. Add about 2 tablespoons of water until it is a nice drizzle-able consistency.
- Add the tomatoes, cucumbers, 1/4 cup parsley, and 1 teaspoon salt to a bowl and toss to combine.
- To assemble your bowl, start with some rice, then add beef, tomatoes and cucumbers and a drizzle of sauce.
