I feel like cabbage soup gets a bad rap, but I truly love it. This one is full of veggies, potatoes and beans.
Ingredients
- 1 head of green cabbage, cored and chopped
- 1 onion, chopped
- 3 carrots, peeled and diced
- 3 stalks celery, diced
- 3 small yukon gold potatoes, peeled and diced
- 1 can cannellini beans, drained and rinsed
- 1 28 oz can diced tomatoes
- 1 quart vegetable stock
- 2 tablespoons Garlic Fused Extra Virgin Olive Oil
- 1 teaspoon Spaghetti Seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons Traditional Aged White Balsamic Vinegar
Instructions
- Heat the garlic olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Add the spaghetti seasoning and saute for 5 minutes until the vegetables start to get tender.
- Add the cabbage, potatoes, tomatoes, beans and stock. Season with salt and pepper. Cover and simmer for 30 minutes.
- Stir in the balsamic vinegar and enjoy.
