Cajun Chicken with Creamy Gnocchi

Spicy, creamy, one pan delicious cajun chicken creamy gnocchi

Ingredients

  • 1 package gnocchi

  • 1 pound chicken tenderloins

  • 2 tablespoons butter

  • 2 tablespoons Cajun Seasoning
  • 2 tablespoons Mission Trail Olive Oil 

  • 1 cup heavy cream

  • 1/2 cup white wine

  • 1/2 cup chicken stock

  • 1/2 cup grated parmesan cheese

  • 1/4 cup parsley, chopped

Instructions

  1. Season the chicken with the cajun seasoning. Heat butter and olive oil in a large saute pan over medium high heat. Saute the chicken for 5 minutes per side, remove and set aside.

  2. Add the wine to the saute pan and simmer for 2 minutes. Add the chicken stock, cream and gnocchi and simmer for 5 minutes until the gnocchi is tender.

  3. While the gnocchi cooks slice the chicken into small pieces. Add the chicken to the gnocchi. Toss with parmesan cheese and parsley before serving.

Takes 20 minutes
