In this convenient sheet pan dinner, sweet smoky pork chops are roasted with cauliflower that get a kick from olives, capers and lemon.
Ingredients

2 thick cut pork chops

2 tablespoons Pork Rub

1 head of cauliflower, chopped

2 tablespoons Koroneiki Olive Oil

¼ cup parmesan cheese

¼ cup green olives, chopped
- 2 tablespoons capers

1 lemon, quartered
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 tablespoons parsley, chopped (optional)
Instructions

Preheat oven or grill to 450 degrees

Rub the Pork Rub all over pork chops and let sit about 15 minutes

Place pork on one side of sheet pan or oven proof skillet and the cauliflower to the other

Toss cauliflower with olive oil, salt and pepper

Place in oven and cook for 15 minutes. Turn over pork chops and toss cauliflower. Continuing cooking until pork is cooked through (internal temperature of 140 degrees), about 10 minutes more.

Let pork rest about 5 minutes before slicing.

Add olives, capers, parsley and parmesan to the cauliflower

Serve together with lemon
