Chicken and vegetables cooked in a flavorful sauce and wrapped in crisp lettuce.
Ingredients

1 tablespoon avocado oil

1 pound ground chicken

1 onion, diced

2 cloves garlic, grated

1/2 cup carrots, shredded

1 tablespoon ginger, grated

1 can water chestnuts, drained and chopped

1 tablespoon sambal oelek

2 tablespoon soy sauce

1/4 cup hoisin sauce

1 tablespoon toasted sesame oil

1 lime, juiced

1 tablespoon rice wine vinegar

1/4 cup green onions, chopped

1/4 cup cilantro, chopped

Iceberg lettuce, torn into smaller cup sized pieces
Instructions

Heat oil in a skillet over medium heat. Add the chicken and cook through. Add the onion, carrots, garlic, and ginger, soy sauce, hoisin sauce, lime juice, vinegar and sambal oelek. Cook for 10 minutes until the vegetables are soft.

Stir in the water chestnuts, green onions, cilantro and sesame oil.

Serve the chicken mixture with lettuce cups.
