This salmon is coated with spicy rosemary butter and cooked with potatoes and lemons on a sheet pan.
Ingredients

1 pound salmon fillet

2 tablespoons butter, room temp

1 teaspoon rosemary

1 teaspoon ancho chile powder

4 small red potatoes, sliced

1/4 cup parsley, chopped

1/4 cup olive oil

1 lemon, cut in quarters
Instructions

Heat oven to 450 degrees

Mix the butter, ancho chile powder and rosemary together

Place the salmon on a sheet pan skin side down and smear the butter over the top of the salmon. Add the potatoes and drizzle with olive oil. Top everything with pinch of salt and pepper. Add the lemon flesh side down.

Roast for 20 minutes until the salmon and potatoes are cooked through.

Top with parsley and serve with the lemon.
