Chicken Piccata Meatballs

I love a good meatball and this is one of my favorites. Flavorful chicken meatballs in a luscious lemon butter sauce! 

Ingredients

  • 1 pound ground chicken
  • 1/2 cup grated parmesan
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 1 tablespoon Garlic Herb
  • 2 tablespoons Meyer Lemon Olive Oil
  • 6 tablespoons butter
  • 2 lemons, 1 juiced and 1 sliced
  • 1/4 cup chopped parsley
  • 1/3 cup white wine
  • 2 tablespoons capers
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound spaghetti

Instructions

  1. Bring a large salted pot of water to a boil and cook the pasta to al dente.
  2. While the pasta cooks make the meatballs by adding the chicken, parmesan, breadcrumbs, egg, and garlic herb seasoning to a bowl. Mix until combined and form into balls.
  3. Heat the lemon olive oil in a large skillet over medium heat. Add the meatballs and cook for 3 minutes per side until golden. Remove and set aside.
  4. Add 4 tablespoons of butter, lemon juice, wine and salt and pepper to the skillet. Simmer until reduced by a third.
  5. Return the meatballs to the pan and add the remaining 2 tablespoons of butter and lemon slices. Cover and cook for 5 minutes until the meatballs are cooked through. Stir in the capers and parsley.
  6. Once the pasta is cooked, toss with the meatballs and enjoy!
