I love a good meatball and this is one of my favorites. Flavorful chicken meatballs in a luscious lemon butter sauce!
Ingredients
- 1 pound ground chicken
- 1/2 cup grated parmesan
- 1/2 cup panko breadcrumbs
- 1 egg
- 1 tablespoon Garlic Herb
- 2 tablespoons Meyer Lemon Olive Oil
- 6 tablespoons butter
- 2 lemons, 1 juiced and 1 sliced
- 1/4 cup chopped parsley
- 1/3 cup white wine
- 2 tablespoons capers
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 pound spaghetti
Instructions
- Bring a large salted pot of water to a boil and cook the pasta to al dente.
- While the pasta cooks make the meatballs by adding the chicken, parmesan, breadcrumbs, egg, and garlic herb seasoning to a bowl. Mix until combined and form into balls.
- Heat the lemon olive oil in a large skillet over medium heat. Add the meatballs and cook for 3 minutes per side until golden. Remove and set aside.
- Add 4 tablespoons of butter, lemon juice, wine and salt and pepper to the skillet. Simmer until reduced by a third.
- Return the meatballs to the pan and add the remaining 2 tablespoons of butter and lemon slices. Cover and cook for 5 minutes until the meatballs are cooked through. Stir in the capers and parsley.
- Once the pasta is cooked, toss with the meatballs and enjoy!
