This is a quick and super flavorful dinner. Meatballs are spiced with Shawarma Seasoning and layered with rice, tomatoes, and cucumbers.
Ingredients
- 1 pound ground chicken
- 2 tablespoons Shawarma Seasoning
- 1/2 cup panko breadcrumbs
- 1 egg
- 2 tablespoons Koroneiki Greek Extra Virgin Olive Oil
- 1 cup rice, cooked
- 1 pint cherry tomatoes, sliced in half
- 1 English cucumber, sliced
- 1/2 cup chopped parsley
- 1 lemon, juiced
- 1 teaspoon salt
Instructions
- Heat the oven to 400 degrees.
- In a large bowl, mix the ground chicken, shawarma seasoning, breadcrumbs and egg. Form into balls and place on a sheet pan and drizzle with olive oil. Bake for 20 minutes, flipping halfway through.
- While the meatballs cook, mix the rice with lemon juice, parsley, tomatoes, cucumber and salt.
- Top the rice with meatballs and enjoy!
