This soup is super flavorful and satisfying with Baharat seasoning, farro, chickpeas and vegetables.
Ingredients
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 garlic cloves, chopped
- 1 can chickpeas, drained and rinsed
- 6 cups vegetable stock
- 2 tablespoons tomato paste
- 1 tablespoon Baharat
- 1 cup farro
- 2 tablespoons Koroneiki Greek Extra Virgin Olive Oil
- 1 teaspoon salt
Instructions
- Heat the oil in a pot over medium heat. Add the onions, carrots, garlic and salt. Saute for about 5 minutes until the carrots begin to get tender. Add the tomato paste and Baharat and saute for another 3 minutes.
- Add the chickpeas and stock and simmer for 5 minutes. Use an immersion blender to blend half of the soup.
- Add the farro, reduce the heat to medium low, partially cover and simmer for about 40 minutes until the farro is tender.
