Chickpea and Farro Soup

This soup is super flavorful and satisfying with Baharat seasoning, farro, chickpeas and vegetables.

Ingredients

  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, chopped
  • 1 can chickpeas, drained and rinsed
  • 6 cups vegetable stock
  • 2 tablespoons tomato paste
  • 1 tablespoon Baharat
  • 1 cup farro
  • 2 tablespoons Koroneiki Greek Extra Virgin Olive Oil
  • 1 teaspoon salt

Instructions

  1. Heat the oil in a pot over medium heat. Add the onions, carrots, garlic and salt. Saute for about 5 minutes until the carrots begin to get tender. Add the tomato paste and Baharat and saute for another 3 minutes.
  2. Add the chickpeas and stock and simmer for 5 minutes. Use an immersion blender to blend half of the soup. 
  3. Add the farro, reduce the heat to medium low, partially cover and simmer for about 40 minutes until the farro is tender. 

Takes 1 hour

Serves 4-6
