This is such an easy and flavorful way to cook chicken. Chicken breasts are smothered in a mixture of chipotle, garlic, and lime juice then shredded and topped with onion, cilantro and more lime juice.
Ingredients

1 pound boneless, skinless chicken breasts

1 can chipotle peppers, pureed or chopped

2 cloves garlic, minced

2 limes, 1 juiced and 1 cut into wedges

1 cup chicken stock

1 teaspoon salt
- 1/2 teaspoon pepper

Cilantro, chopped

1 small white onion, minced

Corn tortillas
Instructions

Preheat oven to 375 degrees and place chicken breast in a baking dish

In a small bowl mix together chipotle peppers, garlic, and juice from 1 lime and spread over chicken

Add about 1/2 inch chicken stock to the baking dish. Cover with foil and bake about 35 minutes until cooked through.

Once cooked through, shred the chicken.

Add chicken to warm corn tortillas (I like to double them up) and top with onion, cilantro and lime.
