This is such a quick and tasty weeknight meal. Crispy bits of pork tenderloin are tossed with chipotle peppers and topped with pineapple in a tortilla.
Ingredients
- 1 pork tenderloin, cut into bite sized pieces
- 2 chipotle peppers in adobo, chopped
- 1 lime, juiced
- 3 cloves garlic, grated
- 1 pineapple, chopped
- 1 jalapeno, sliced
- 2 tablespoons avocado oil
- 1 teaspoon salt
- corn or flour tortillas
Instructions

In a large bowl add the pork, chipotles, lime juice, salt and garlic.

Heat the oil in a skillet over medium high heat. Add the pork and cook for about 5 minutes per side until crisp on the outside and just cooked through.

Warm tortillas in the oven or stove.

Top a tortilla with pork, pineapple and jalapeno.
