This cake is rich and deeply chocolatey. It took time to perfect this recipe which is inspired by a chocolate cake my great grandma made. The olive oil makes it rich and tender.
Ingredients
Cake- 1 1/2 cup flour
- 3/4 cup cocoa powder
- 3/4 cup Koroneiki Greek Extra Virgin Olive Oil
- 1 1/2 cup sugar
- 1 teaspoon salt
- 2 teaspoons vanilla bean paste
- 1 1/2 teaspoon baking soda
- 3 eggs
- 1 cup boiling water
Frosting
- 1 cup sugar
- 4 tablespoons butter
- 4 tablespoons milk
- 1/3 cup chocolate chips
- 1 teaspoon vanilla extract
Instructions
- Heat oven to 325 degrees. Grease a 9 inch springform pan and place parchment at the bottom.
- In a large bowl, beat the oil, eggs, sugar, salt and vanilla bean paste together until light and fluffy.
- Mix in the cocoa powder, flour, and baking soda. Stir in the boiling water until the batter is smooth.
- Bake for 35-40 minutes. Let cool before adding the frosting.
- Make the frosting by mixing together the sugar, butter and milk in a saucepan over medium heat. Bring to a boil and boil for 45 seconds. Remove from the heat and add the chocolate chips and vanilla. Beat for 1 minute. Pour over the cooled cake.
