Chocolate Olive Oil Cake

This cake is rich and deeply chocolatey. It took time to perfect this recipe which is inspired by a chocolate cake my great grandma made. The olive oil makes it rich and tender.

Ingredients

Cake
  • 1 1/2 cup flour
  • 3/4 cup cocoa powder
  • 3/4 cup Koroneiki Greek Extra Virgin Olive Oil
  • 1 1/2 cup sugar
  • 1 teaspoon salt
  • 2 teaspoons vanilla bean paste
  • 1 1/2 teaspoon baking soda
  • 3 eggs
  • 1 cup boiling water

Frosting

  • 1 cup sugar
  • 4 tablespoons butter
  • 4 tablespoons milk
  • 1/3 cup chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 325 degrees. Grease a 9 inch springform pan and place parchment at the bottom.
  2. In a large bowl, beat the oil, eggs, sugar, salt and vanilla bean paste together until light and fluffy.
  3. Mix in the cocoa powder, flour, and baking soda. Stir in the boiling water until the batter is smooth.
  4. Bake for 35-40 minutes.  Let cool before adding the frosting.
  5. Make the frosting by mixing together the sugar, butter and milk in a saucepan over medium heat. Bring to a boil and boil for 45 seconds. Remove from the heat and add the chocolate chips and vanilla. Beat for 1 minute. Pour over the cooled cake.
