This is a delicious twist on a classic bruschetta. Crostini with whipped feta and fresh strawberries, peaches, and basil.
Ingredients
- 1 baguette
- 8 ounces feta
- 1/2 cup Basil Olive Oil
- 1/2 cup Greek yogurt
- 1 peach, diced
- 8 strawberries, diced
- 1/4 cup basil, sliced thin
- 2 tablespoons Strawberry Peach Balsamic Vinegar
- 1/2 teaspoon black pepper
- 1/2 teaspoon Sumac
- 1 teaspoon Mediterranean Cyprus Flake Salt
Instructions
- Heat the oven to 450 degrees. Cut the baguette into slices and drizzle with olive oil. Cook in the oven for 10 minutes until golden brown.
- In a food processor add the feta, olive oil, and greek yogurt. Mix until smooth.
- In a small bowl mix the strawberries, peaches, balsamic vinegar, pepper, and sumac.
- Assemble the bruschetta by spreading a layer of the feta, top with the strawberries and peaches, then finish with a bit of basil and sprinkle of salt.
