Chorizo and Shrimp

Chorizo and Shrimp - Olive Branch Oil & Spice

This one pan dinner comes together in under 30 minutes with a combination of chorizo, butter, wine, lemon juice, and shrimp.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound uncured chorizo, sliced
  • 1/2 cup chicken stock
  • 1/2 cup white wine, optional
  • 2 tablespoons butter
  • 1/4 cup parsley, chopped
  • 1 lemon, juiced
  • 2 tablespoons Garlic Olive Oil 
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons Spanish Smoked Paprika

Instructions

  1. Pat the shrimp dry, place in a bowl and toss with paprika, salt and pepper.

  2. Heat the olive oil in a skillet at medium heat. Add the chorizo and sear for 2 minutes per side. Remove and set aside.  Add the shrimp and cook for 2 minutes per side. Remove and set aside with the chorizo.

  3. Add the wine and lemon juice. Simmer and slightly reduce, then add the chicken stock and butter.  Simmer for another 3 minutes.

  4. Return the shrimp and chorizo to the pan. Top with parsley and serve with crusty bread.
