These are so easy, delicious and the best meatballs ever according to my family. I love these in sliders, but you could serve with spaghetti or crusty bread.
Ingredients
- 1 pound ground chicken
- 1/2 cup grated parmesan cheese
- 1/2 cup Panko bread crumbs
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Italian Seasoning
- 1 jar marinara sauce
- 1 ball mozzarella, sliced
- 12 brioche sliders
- 2 tablespoons Garlic Olive Oil

In a large bowl, combine the chicken, bread crumbs, parmesan, egg, salt, pepper and Italian seasoning. Form into 2 inch balls.

Heat the olive oil in a large skillet over medium high heat. Add the meatballs to the skillet in a single layer and cook for 3 minutes per side. Add the marinara sauce and partially cover for 5 minutes. Uncover and top the meatballs with a slice of mozzarella. Cover for a minute until the cheese is melty.

Serve the meatballs in a slider.
