This queso is perfection. A little spicy, lots of cheesy goodness, and loaded with delicious chorizo. You can't be mad when you have queso for dinner!
Ingredients

1 pound ground chorizo

1 1/2 cup milk

1 cup Monterey jack, shredded

1 cup American cheese, diced

2 tablespoons flour

2 tablespoons Sonoran Olive Oil

2 tablespoons butter

1 teaspoon ground cumin

1 jalapeno, seeded and diced

2 cloves garlic, grated
Instructions

Heat pot over medium heat and add the chorizo. Once cooked through, remove from the pot and set aside.

Add olive oil to the chorizo drippings and cook the jalapeno, garlic and cumin for 2 minutes. Whisk in the flour and cook for 1 minute then add milk. Simmer until reduced by a third. Whisk in the cheeses and simmer until melted. Melt in butter, then add the chorizo back in.

Serve hot with tortilla chips.
