This is such a satisfying and ridiculously easy and fast dinner (10 minutes!). Smoked chorizo is grilled crisp and layered in an egg bun with spicy mayo and banana peppers.
Ingredients
- 4 uncured chorizo sausages, sliced lengthwise and halfwise
- 1/4 cup mayo
- 1/4 cup Schug (optional)
- 1/4 cup pickled banana peppers (or pepperoncini)
- 4 buns (I prefer egg buns, but any will do)
Instructions
- Heat grill to high
- Grill the chorizo until slightly charred and warmed through, about 3 minutes per side. Add the buns and toast for about 2 minutes.
- While the chorizo cooks mix together the mayo and Schug. (Note: if you don't have Schug, just use mayo)
- Assemble the sandwich by smearing the spicy mayo on the bottom bun, top with 4 pieces of chorizo, and some banana peppers.
