This is a simple and really delicious one pan dinner with delicata squash, andouille sausage and kale braised in apple cider.
Ingredients

2 delicata squash, seeded and sliced

1 pound andouille sausage

1 bunch kale, chopped

2 cloves garlic, minced

2 tablespoons butter

2 cups apple cider

1/2 teaspoon cayenne

1 teaspoon ground allspice

1 teaspoon salt

1/2 teaspoon pepper
Instructions

Heat butter in a large skillet over medium heat. Add the garlic and saute for 2 minutes.

Poke the sausages all over with a fork, then add the sausages to the pan and brown on both sides. Add the squash, cayenne, allspices, salt and pepper. Saute for a couple minutes. Add the cider and simmer for 15 minutes until the squash is tender and sausage cook through. Add the kale and toss until just tender.
