This chicken is marinated in a punchy cilantro, lime, garlic mixture then grilled and served over a bed of lettuce with tomatoes, grilled corn, and avocado.
Ingredients

4 boneless chicken breasts

1 cup cilantro leaves

1/4 cup + 2 tablespoons Garlic Olive Oil
- 1 tablespoon Jalapeno Lime White Balsamic Vinegar

2 limes, juiced

2 teaspoons salt

1 teaspoon pepper

4 cups lettuce

2 tomatoes, cut into chunks

2 cobs of corn

1 avocado, diced
Instructions

Blend the cilantro, lime juice, olive oil, salt and pepper together. Add the chicken to a ziplock bag and pour the marinade over the chicken. Marinade for 15 minutes.

Heat the grill to high heat. Remove the chicken from the marinade and add to the grill. Remove the corn from the husks and rub with oil. Add to the grill with the chicken. Cook the corn and chicken for about 15 minutes, flipping halfway through.

While the chicken and corn cooks assemble the bed of lettuce, tomatoes, and avocados. Cut the corn from the cob and add to the lettuce. Mix 2 tablespoons of olive oil and the balsamic vinegar together and lightly dress the salad. Slice the chicken and serve with the salad.
