This ragu is rich, cozy and quick enough for a weeknight.
Ingredients
- 1 pound short pasta
- 1 pound ground pork
- 2 tablespoons Tuscan Seasoning
- 2 tablespoons Italian Herb Infused Extra Virgin Olive Oil
- 2 shallots, chopped
- 2 carrots, peeled and chopped
- 1 fennel bulb, chopped
- 2 garlic cloves, chopped
- 1/2 cup white wine
- 1 cup heavy cream
- 1/2 cup grated parmesan
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Bring a large salted pot of water to a boil and cook the pasta to al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the shallots, carrots, fennel, garlic, salt and pepper. Saute for 5 minutes. Add the ground pork and Tuscan Seasoning. Saute until the pork is browned.
- Add the wine and simmer for 3 minutes until slightly reduced. Add the cream and parmesan and turn the heat to low.
- Once the pasta is cooked, add 1/4 cup pasta water to the sauce. Add the drained pasta and toss well with the sauce.
