Fattoush is a delicious Lebanese salad. My version is made with fresh tomatoes and cucumbers, herbs, crispy pita bread and halloumi with a bright sumac dressing.
Ingredients
- 1 pita, cut into bite sized pieces
- 8 ounces halloumi, cut into bite sized pieces
- 4 roma tomatoes, chopped
- 2 persian cucumbers, chopped
- 1 head of romaine, chopped
- 1/4 cup Garlic Fused Extra Virgin Olive Oil
- 1/4 cup Koroneiki Greek Extra Virgin Olive Oil
- 1 tablespoon Pomegranate Aged Dark Balsamic Vinegar
- 1 teaspoon Sumac
- 1/2 teaspoon salt
- 1/4 fresh parsley leaves
- 2 tablespoons fresh mint leaves
Instructions
- Heat the oven to 400 degrees.
- Add the pita and halloumi to a sheet pan and toss with garlic olive oil. Bake in the oven for 10 minutes, flipping halfway, until the pita and halloumi are golden and crispy.
- In a large bowl add the Koroneiki Greek olive oil, pomegranate balsamic vinegar, sumac and salt. Whisk well to combine. Add the tomatoes, cucumbers, lettuce and herbs. Toss well to coat with the dressing. Mix in the crispy pita chips and halloumi.
